2 tbsp extra virgin olive oil
1 red pepper, chopped
1 onion, chopped
1 garlic clove, crushed
2 ounces mushrooms, sliced
4 eggs, beaten
Preheat grill to medium.
Heat the oil in an oven-proof frying pan over a medium heat.
Add the peppers, onion and garlic and saute for 5 minutes (or until tender), stirring.
Add the mushrooms and cook for a further 5 minutes, stirring occasionally.
Pour over the eggs and cook for a further 2 minutes then place under the grill until puffed and browning on top. Serve.
