4 cups mixed greens or baby spinach
1 large carrot, grated
6-8 slices roast turkey, chopped
1 tsp chopped fresh cilantro
1 avocado, peeled, pitted and cubed
2 lime wedges
Combine the greens and carrot in a bowl.
Add the turkey and cilantro (coriander) and toss to combine.
Just before serving, add the avocado and squeeze the lime wedges over the salad.
Season with salt and freshly ground black pepper to taste, and serve.
For a dinner serving , do a slightly larger portion.
