Ingredients
1 tbsp extra virgin olive oil
1 red pepper, sliced
½ small onion
½ tsp fresh basil, chopped
½ tsp dried mixed herbs
2 ounces beef tenderloin
2 eggs, beaten
Freshly ground black pepper

Method
Heat the oil in a frying pan over a medium heat.
Add the peppers, onions and herbs and saute for 5 minutes.
Layer the beef over the top and saute for another minute. 
Pour over the eggs, stir and saute for a further 2-3 minutes.
Season with pepper and serve.
