Serves 2 as a dinner, 4 as a lunch
This doesn’t look like it is going to be very filling when you make it up but, trust me, it is!  I couldn’t finish my portion (Gavin had to help me out!).

Coconut oil for frying
400g lean minced beef
Toasted sesame oil for frying
2 garlic cloves, peeled and crushed
2 inch piece of fresh root ginger, peeled and finely chopped
1 red chilli, de-seeded and chopped (use 2 if you like it more spicy)
1 tbsp fish sauce 
Zest of 1 lime and juice of ½
4 spring onions, trimmed and finely sliced
Sea salt and freshly ground black pepper
2 little gem lettuces, separated into leaves , washed and dried
1 tbsp soy sauce
Juice of ½ lime
1 tsp sesame oil
½ red chilli, de-seeded and thinly sliced
1-2 tsp fish sauce
1 tsp honey
1 tbsp olive oil

Heat a large frying pan and add a little coconut oil.  Season the beef mince with salt and pepper, mix well and add to the pan. 
Fry for 5-7 minutes or until crisp, brown and broken into small pieces.
Drain the mince off in a sieve and set aside on a plate covered with kitchen paper (this will help it to stay nice and crispy).
Wipe the pan and add 1 tbsp toasted sesame oil.
Add the garlic, ginger and chilli and a pinch of salt and fry for 2 minutes.
Add the mince and stir through the mixture.
Add the fish sauce, lime zest and juice and spring onions and stir over the heat for around 1 minute.
Mix the dressing ingredients together in a small side bowl.
Lay out the lettuce leaves on a large plate and spoon some of the mince into each.  Serve drizzled with dressing.
