Ingredients
4 eggs
1 tbsp chopped fresh chives
2oz smoked salmon, roughly chopped
Knob of butter
Salt and freshly ground black pepper

Method
Beat the eggs, stir in the chives and season with salt and pepper.
Heat the butter in a large oven-proof frying pan until melted, pour in the eggs and cook over a medium heat for 3-4 minutes.
Place the pan under a medium hot grill for a couple of minutes until the egg starts to puff up and brown on the top.
Sprinkle over the chopped smoked salmon, fold in half and serve.
