500g (1lb 2oz) bag frozen summer berries
2x200g (7oz) cartons low fat Greek yoghurt
finely grated rind and juice of 1 orange
1 tbsp honey (or to taste)
1 lime, cut into wedges, to garnish
Place the frozen berries, yoghurt, orange rind and juice into a food processor and whizz until blended.
After a minute, stop the machine, scrape the sides with a spatula and continue processing until the mixture becomes smooth and thick.
Add the honey, taste and add a dash more until you have it sweetened to your liking.
Spoon the mixture into 6 glasses and serve immediately.
TIP: this recipe can be made in advance and frozen for up to 4 months. When needed, remove it from the freezer and defrost for 40 mins at room temperature, before stirring well and serving.
