6 ripe plum tomatoes, skinned, seeded and cut into thin strips
1 small bunch basil leaves, finely shredded
1 oz thinly sliced, black pitted olives
3 shallots, finely chopped 2 garlic cloves, finely chopped
1 tbsp extra virgin olive oil
2-3 tbsp balsamic vinegar
Mix the tomato with the rest of the ingredients.
Season to taste with sea salt and ground black pepper.
