Cooking Time: 15-20 mins

Serves 1

Ingredients:

1 boiled eggs, diced
1 bacon medallions, diced
1tbsp oil
Handful of spinach or lettuce
50g pepper , diced
½ tbsp mayonnaise
Handful of spinach

Directions:

1. Place the oil and bacon in a frying pan over a medium heat and cook until the bacon has started to crisp.
2. Remove the excess oil and place the bacon into a mixing bowl with the boiled eggs, pepper, spinach and mayonnaise.
Combine well.
3. To serve, place some salad leaves on a plate and top with the egg and pepper mixture.
