This one is so easy, even I can do it!  My daughter, Tallulah, loves it.  She’s allergic to dairy, hence the ‘dairy free’ tweak.

Ingredients:
1 and ¾ cups organic wholegrain spelt flour (or wholegrain regular flour works fine too)
¼ cup caster sugar
1 tsp bicarbonate of soda
½ tsp cinnamon
1/8 tsp sea salt
3 bananas
¾ cup coconut (or soya) milk
¼ cup olive oil
1tsp real vanilla extract
1 tsp red wine or apple cider vinegar

Topping:
¼ cup raw sunflower seeds
2 tbsp oats
1 and ½ tbsp sugar
½ tsp cinnamon
Pinch of salt
1¾ tbsp margarine (We use one called PURE which is completely dairy free).

Method:
Preheat an oven to 180 degrees and grease and line a loaf tin with baking paper
In a bowl, combine the flour, sugar, bicarb, cinnamon and salt.  Mix through with a spoon.  Then make a well in the centre.  Mush the bananas through your fingers and allow the mush to fall into the well.  Then add the milk, olive oil, vanilla and vinegar.  Stir with a spoon until well combined.  Add to the pan and place on the middle rack of the oven for 15 minutes.
Meanwhile, mix the topping ingredients in a small bowl until well combined.
When the loaf has been in for 15 minutes, take it out of the oven, sprinkle over the topping and return to the oven for another 30 minutes (or until a knife inserted comes out clean).
