Ingredients
3 tbsp olive oil
1 garlic clove, crushed
1 tbsp ground cumin
350ml vegetable stock
1 cup couscous
2 tomatoes, peeled and chopped
4 spring onions, finely sliced
1 fresh green/red chilli
2 tbsp lemon juice
Handful fresh parsley or mint
Salt and pepper

Method
Heat the oil in a saucepan, add the spring onions, garlic and cumin and cook for 1-2 mins.  Add the stock and bring to the boil.
Remove from the heat and stir in the couscous.  Leave to stand for 10 minutes.
In a bowl, stir in the tomatoes, herbs, chilli and lemon juice and season.  Serve either on its own or with chicken or fish.
