2 small cod fillets (enough for one serving per person)
2 cups frozen peas
1 cup yoghurt
1 handful fresh mint leaves
Salt and fresh ground black pepper
Mixed green veg to serve
Preheat the oven to 180 degrees.
Boil the peas until cooked through.
Add to a blender with the yoghurt and mint and season with salt and pepper. Blend until the mixture becomes a smooth paste. Loosen with a little more yoghurt of necessary.
Divide the mixture in half and spread a nice thick layer over each cod fillet.
Place in a roasting tray in the oven for around 15-20 minutes, or until the cod is cooked through.
Serve with cooked green veg.
