9 oz spelt flour
1 tbsp baking powder
pinch sea salt
2oz caster sugar
2oz cold butter
5-6 tbsp milk
2oz dried cherries
3oz good quality dark chocolate, chopped into chunks
Preheat the oven to 190 degrees/Gas 5.
In a mixing bowl, combine the flour, baking powder, salt and sugar. Mix well with a spoon.
Rub in the cold butter until the mixture forms a crumbly consistency.
In a separate bowl, beat the egg and milk.
Stir into the dry ingredients to form a sticky dough.
Fold in the cherries and chocolate.
Turn the dough onto a lightly floured surface and flatten so that it is around 2cm thick.
Cut the dough into 8 wedges and arrange on a greased baking tray around 1 inch apart.
Bake for around 12 minutes until light golden in colour and cooked through (a knife inserted should come out clean).
Cool on a wire rack.
Serve warm or cool with a nice cup of tea!
