300ml low fat fromage frais
150ml low fat natural yogurt
25g (1oz) icing sugar
4tsp good quality drinking chocolate powder
4 tsp cocoa powder
1 tsp vanilla extract
2 tbsp dark rum (optional)
2 medium egg whites
Berries and amaretti biscuits to serve
Combine the fromage frais and yoghurt in a mixing bowl. Add the drinking chocolate, icing sugar and cocoa powder and mix well. Add the vanilla extract and rum (if using).
In another bowl, whisk the egg whites until stiff. Using a metal spoon, fold the egg whites into the chocolate mixture.
Spoon the mixture into 6 small china serving dishes and leave to chill in the refrigerator for 30 minutes.
Decorate with grated chocolate and serve with a square of dark chocolate.
