(serves 4 as a side dish)
1 large broccoli florette, cut into bite-sized chunks
2 tbsp olive oil
juice and zest of half a lemon
1 small packet flaked almonds
Preheat your grill to medium, spread the almonds out on a baking tray and toast for 1-2 minutes, watching carefully to ensure they don’t burn.
Boil a pan of water and cook the broccoli for 2-3 minutes, until just tender.
Drain the broccoli, return to the pan and add the olive oil, lemon juice and zest and almonds and heat on a low heat for 1 minute until warmed through. Serve.
