1 bulb garlic
Extra virgin olive oil
½ lb asparagus, trimmed and cut into 2 inch chunks
1 tbsp ground almonds
½ tsp oinion powder
Preheat the oven to 200 degrees. Peel off some of the outer papery layers from the garlic and slice off the top ¼ inch.
Drizzle with olive oil and wrap in foil.
Place on a baking tray and bake for 30 minutes. Remove from the foil and cool.
Heat 1 tbsp oilve oil in a large frying pan over a medium heat.
Add the asparagus and cook, turning occasionally, until bright green, for 3-4 minutes.
Sprinkle with ground almonds and onion powder and squeeze the roasted garlic out into the pan.
Cook for another 1-2 minutes then serve.
